Tajine

A tajine is both the name of the iconic North African cooking vessel and the slow-cooked stew typically prepared in it. The pot consists of a wide, shallow base and a conical lid. That distinctive shape isn’t just for looks – it allows steam to circulate inside, then condense and drip back down, keeping everything moist and flavourful throughout the cooking process.

How does a tajine work?

Thanks to its closed design, a tajine keeps all the moisture and aroma inside, letting ingredients cook slowly and evenly. It’s ideal for gentle simmering and doesn’t require much fat or liquid. The result is a dish with rich, concentrated flavour – whether you’re making a savoury meat stew or a fragrant vegetable dish.

How to use a tajine pot?

Using a tajine is a little different from a regular pan – and that’s exactly what makes it so special. The key is to take it slow. Let the pot heat up gradually on low heat to avoid thermal shock, especially if it’s made from clay or ceramic. At BEKA, our tajines are designed for all heat sources – including induction – and they’re oven-safe too. Once everything is in the pot and the lid is on, there’s not much left to do. The steam takes care of the cooking – no stirring needed.

Steaming, simmering, or slow cooking—using a tagine opens up a world of culinary possibilities. When choosing a tagine, the material is an important consideration. A cast iron tagine is highly recommended, as it is compatible with both induction cooktops and ovens. Additionally, consider the size of the tagine to ensure you can serve enough food for your guests. How to make tajine?

Start with a flavourful base of onions, garlic, and traditional spices. Layer your ingredients – meat, vegetables, or a mix – then top with dried fruit or nuts for a sweet touch. Add just a bit of liquid, cover with the lid, and let it simmer slowly. A good tajine isn’t about speed – it’s about letting flavours build over time.
